I purchases a MES 30 and working my way up to a brisket.  Understand that is the "Holy Grail" of BBQ'ing.  Started with Baby Back Ribs (2-2-1), Pork Shoulder (Brined for 24h, Rubbed for 12h and Cooked for 12h) and today a "spatchcocked chicken for 3h (from the Daddgum recipe).

I've added casters and a simple sun glare / weather shield for the controller.  Bought a used stainless cart and use that as my prep station.


So far I'm loving just tinkering with the smoker and trying new things.
