Hi. I used to live in Kent, OH. Now in rural Thailand. In this pic I am smoking slim jim type meat snacks in my homemade barrel oven. I attempted two local flavors, one is laap, which has roasted rice powder, (not a good binder) cilantro, green onion, lemon grass and fish sauce. The other has the ingredients of a Thai snack which is fried lime leaf, chili and garlic with peanuts. I never thought of putting peanuts in a sausage but it came out quite well. Thanks for asking.

Oh yeah and i wanted to mention I use Lum Yai fruit wood for smoking. It is the best wood smoke flavor i have found here,I think it resembles mesquite flavor.
