I've been smoking meats for about 10yrs with varied success.  I have a propane smoker and just recently (1yr ago) purchased an electric smokehouse. I'm an avid hunter so I do enjoy smoking wild game.  One thing that I've been trying to research and perfect- I've done two to date... is a venison ham.  Both have turned out okay- nothing has gone to waste, but I'm looking for that truly great end result.  Anyway, I'm glad to be apart of the form and looking forward to learning along side everyone.  Have a good one- Matt
