Just saying hello. I have done barbecue and smoking most of my life but never put a whole lot of thought or research on it until now. I have a fine dining background and my wife and I recently decided to close it down and resurrect an old school bus into a food truck.

Two things I swore I would never sell are Tacos and Bbq. I wound up putting brisket on the menu one day and ever since people will riot if I don't have it. Nothing wrong with tacos or barbecue but there are tons of trucks out there that specialize in those areas.

Iwound up buying a smokin it smoker and am now researching and trying all sorts of things. BBQ and smoking are a whole different ball game than fine dining and classic technique. I know a few very good chefs that can't do BBQ to save their lives.
I know I have a lot to learn. Apparently mine is good enough to sell, but there is so much more I can learn and experiment with!
