Hello everyone,

i am a 30yo professional cook from Kos, Greece!!
So far i have been cooking mostly with sous-vide.
Here we are used to grill stuff and not smoke them and it all started out when i got in my hands a heat expansion tank ( link ) and transformed it into a UDS.
I spend most of my time will be either in a kitchen or in the nature foraging.

I worked in a few Greek kitchens. I cant wait to see what you bring to our tables. I'm enjoying all the different foods and styles here on this site.

Welcome from South Carolina. You came to the right forum to learn about smoking. The knowledge you gain might give your resturant a leg up on the competition since smoked foods are not all that common in your locality. Looking forward to future discussions. 🍻
