Hey everyone. I've been searching this site for tips, techniques, and ideas for some time now and have just joined it not so long ago.

I have a Char-Griller Duo that I added the side firebox to. I've done some mods (can take some pics if someone wants) to it to make it more efficient, and have some that I still need to do. I currently use chunks and thinking of going to small splits. I also use Royal Oak hardwood lump charcoal as fuel.

So far I've smoked:

1.) Thanksgiving turkey that I smoked with Apple.

2.) Christmas packers cut brisket with Hickory and Apple blend.

3.) 2 8# pork shoulders for Father's Day done with Hickory and Apple.

4.) 2 Fatties (Q-view to follow in Fatties area) for the 4th of July with Hickory.

        - ground my own hamburger for burgers

        - done some simple ABTs on the gas side

I'm 25 yrs old. Married with a handsome 6 month old w/ Spina Bifida. My wife asked me while buying meat to grind, why can't I do anything simple. To which I thought to myself...Because I'm a guy whole loves great food.

I've lately been browsing the cold smoking area and that's got me intrigued. So who knows, I may adapt a cold smoker unit for my Duo.
