hi all.. new to smoking, been bbq'ing for years, but just about to build my own smoker, so found this place on my travels,

Ireland doesn't have a big 'smoking' community, to be honest its barely done over here, and its hard to get any decent equipment..

so I'm going to weld up my own, so ive been so researching the best home build solutions..

My plan is a decent 4 x 2 x 2 ft box, from 3mm steel. not sure if i should double wall it and insulate, .. it will have chimney at top, heat area at bottom, cant decide weather to go gas or electric.. but should be able to do either or even put in coals if i want..

( i want to do long slow smokes)  but im just goingt o keep it simple and clean for eth monet, especialy as its my first build..

anyways i figure i should get lots of good knowledge and experience here..  so hello to all from wet n windy Dublin..

any other Irish heads here?
