Hi I worked in a USDA packing house where my main job was curing. Mainly making hams, bacon, jerky, and smoking turkeys for the holidays. Haven't worked there in 13 years I want to build my own smoker and learn some new tricks. I am hoping to turn our coal room in the basement into a walk-in it is 6x6x6.
