Good morning!

I've been lurking for awhile and have been smoking for several years using a cheap brinkman charcoal smoker. My wife got me an OK Joe Highland last month and I've used it a couple times to great success. I did the basic seal on the door and rtv on firebox seams but otherwise have no mods. My only complaint is difficulty keeping the temp DOWN .I seems to want to settle around 250 at the grate on Royal oak lump and cherry/apple chunks or pecan splits (I have pecan trees on my property).

I'm using a inkbird 4x 4 probe thermometer which is an awesome, affordable Bluetooth thermometer. I'm pretty surprised to find almost a perfect temp split across the OK Joe, left and right are the same. No baffles or anything .just an aluminum pan with apple juice and water that catches drippings under the meat .

Last weekend I did beef and pork ribs and a picnic roast (pulled). All were spot on and extra pulled pork went in the freezer for a mid week snack .

This weekend I have a chuck roast on and will do some potatoes hasselback on the weber when it gets close to done. Summer is here!

Welcome from Virginia. You can try using RO briquettes to keep the temp down. The uniform size makes them more consistent.
