Hello everyone,
New member here. I just purchased a Master Forge smoker and I am looking forward to using propane for heat. I have had some very small experience with a old vertical Brinkam charcoal smoker but I found it cumbersome to use, seems the temp fluctuations for me where to wild with the charcoal and wood chunks so I figured propane would be easier to manage. For long smokes it was a chore using the charcoal Brinkman smoker ;)
I also used a Big Chief electric smoker in the past for Fish, and only fish. I found the temps on the Big Chief where too low for me for doing bigger cuts of meat. It worked perfect for salmon.
I have made fresh and smoked Polish sausage and even some beef summer sausage before.
Now that I have my propane smoker I am looking forward to getting back into smoking more often :)
