HI guys. Just got my first electric smoker for Christmas. It's 30" chip smoker.

Did some Jerky gun hickory smoked Jerky the other day. Flavour turned out awesome but I dried it a little too long. Next time 6 hours not 8. Currently have two maple brined whole mallards on the rack with Apple smoke going.

Will see how that turns out.

Should be a great resource for me thanks in advance for all the help I'll get.

Well my duck endeavour turned out satisfactory. Started way to early at 9 am at 225* and checked on it after 2.5 hours and looking and behold they were already at 160* internal. So I cut the heat down to 160 and left it for another 1.5 hours. Should have just pulled them after 2.5 hours as they were well done. Rather than a nice medium rare that duck should be. However the brine and apple smoke still made the birds taste amazing when sided with wild rice, asparagus and red pepper jelly to aid in the moisture loss issue. All who had it did enjoy it! Next time I will start the temp around 175 and go from there.

My biggest concern was the - 10*C out door temp. I thought it would greatly effect my cooking times however in this masterbuilt it didn't seem to matter as I kept it out of the wind.

And the journey continues... What's next! . Ribs!

Welcome to SMF as stated you can't beat this site for info. Glad you were able to get the Duck cooked.

Glad it turned out. I agree on overcooked on any wild game. Start a new thread in the wild game section and tell us all about it and show some pics.

Yes ribs are always good. If you haven't already you should check the set temp of your MES against a tested thermometer. Most are off some more than others.
