My name is Ric and I live in Dallas, Texas. I purchased a Southern Pride DH-65 for my home a few years ago and have really enjoyed playing around with it. I put a kill switch on the steam tray so that I can choose whether I want to use 1, 2 or all 3 of the heating elements when I smoke.
I have decided I enjoy smoking meats so much that I would like to open a little smoked meat/ribs shop so am now getting serious about acquiring a little knowledge about the ART of smoking meats.
I have read many of the threads from your forum in the past and figured if I wanted to get serious about smoking meats I had better go ahead and join the site so that I could be an active participant.
