I've actually been lurking here for a while and it occurred to me that I have not introduced myself. I started out smoking with a Mecco bullet smoker that had an electric element in it. It was given to me by a friend that moved away. I really like what I was getting out of it and later contacted Aussie Grills and got the parts I needed to use charcoal with. Two years ago I moved up to the Brinkman smoker with the fire box on the side and have been at it with that ever since. I like using Apple wood along with Cherry and some of the other fruit woods that are in great abundance here. It would be nice to get my hands on some mesquite and other woods from the south too so that I can do some mixing and matching. The apple wood goes a long way here though. I smoke when ever I get the chance and enjoy it whole heartedly I like to use whole wood over chips myself. I have gleaned a great deal of useful knowledge from this site and am glad to be a part of it. Thank you all for everything that you share.

If you haven't figured it out already we like to see pictures of your gear and what you smoke on it - we call it Q-view.

I actually buy some wood online that is hard to find in my area, I'm sure you could do the same.

I use the Baxter's Original website and have had good luck with them.

Maybe get yourself some hickory or mesquite to compliment the cherry and apple.

My favorite combo is hickory and cherry about a 50/50 blend.

I will put up a pic of my rig soon but for now here is a pic of one of my recent works of art! Also I should mention that I am also a home brewer and have yet to find a better combination than home made beer and slow cooked what ever :)

Did this pork butt back in Oct for my B'day and am going to do another tomorrow

Here is my rig it's a Brinkman from Home Depot. Not perfect but I have read the thread on mods for it but the one thing I would like to find is a better grate for the firebox. The one that came with it is weak at best!
