I'm new to smoking but having a lot of fun experimenting. I have a Weber kettle that I've been pretty lucky with so far, and jut picked up a used brinkman 2 door charcoal smoker. It's been modified and so far so good with charcoal. I can keep the temp between 200 and 225. It took a little practice but I smoke 6 lbs. of bacon in it a couple weeks ago and it came out pretty darn good for an amature.
I have access to a couple of old gas grills that I'm thinking about salvaging the burners from and converting the brinkman. I'm also thinking a hot plate. If anyone has any advice, I'm all ears.
