Howdy folks,

I am Brad "CanuckColdSmoke" from Calgary Alberta.  I have done a little smoke cooking over the past but nothing serious.  I just purchased a cheap little propane smoker from Lowes (who have moved into Canada in the past few years.)  Nothing too exciting but it is an improvement over the old piece of industrial ductwork that I rigged into a smoker with an old "hibachi" style portable bbq.

I have done a brisket in a corned beef style and a simple smoke style as well as some salmon, pulled pork, pork hocks, beef ribs and the best so far has been some baby back ribs from a recipe by Alton Brown.

I am looking forward to improving some of these efforts and expanding to bigger and better things also!  I have a couple of turkeys in the freezer right now and am planning on one for Thanksgiving. 

The picture in my profile is a backyard setup I would love to have ... that's right it is not my backyard ... YET!  I am hoping to have something similar within a year or so.

Gotta run now ... just starting the working day ... looking forward to sharing experiences and learning more.

PS  It is not snowing here yet... but there is some talk of flurries next week in the forecast!  That's okay though cause hockey season has started and we are back on the ice already!  (Even if the NHL can't get their sh** together!)

Hey, Im back!  Been a busy couple of weeks!

Does anyone have suggestions for a sirloin tip roast ... I have had it in a cure I have used for a montreal smoked meat style for 3-4 days and am rinsing it now.  I was going to put a basic spice mix ... pepper and coriander for a day or two and then cook it this weekend.  I am not sure what method to cook though?  Thinking of an hour of smoke and a few hours more of a slow cook without smoke until it reaaches temperature.  I've considered a quick steam before serving.

Your comments would be greatly appreciated ... don't hold back on the criticism!  I haven't tried a sirloin tip before and may be barking up the entirely wrong tree!

by the way ... we woke up to our first snow of the season today : (
