Hi new to the site. I am from southwest Louisiana. I've been around and have smoked and barbecued all my life. I feel Louisiana barbecue is the best keep secret in the country, you just don't here about much. We smoked a lot of sausage down here in the winter mouths with old fashioned smokehouses. I have an old 55gal drum pit that works real well with real wood I feel that's the best way to smoke and grill. I have recently bought an electric smoker for my birthday. Did a 12lbs packer brisket over night. It was perfect!!! I'm glad to be here
