My name is Jay and I found this website on google while trying to get some info on smoking sausage. I am new to world of smoking. I purchased a WSM about a month ago and am now hooked. So far I've smoked a few pork shoulders, chicken, ribs and a brisket. I live on Long Island and am looking forward to smoking fresh fish as soon as I start hooking them. Gonna try and experiment with smoked sausage as soon as my casing arrive by mail. Just have to say that everyone seems really friendly and helpful from what I read so far.
