Hello everyone! My name is Tony and i am coming to you from my living room desk that is located in North Little Rock, Arkansas.
I am an avid smoker! ( meat that is ) and am always looking for an excuse to fire up my smoker and cook something, I cook on a trailer mounted offset wood smoker that I will post pic's of when i am accepted into this group, It is a 4ft long X 2ft wide with 2 slide out shelves, the firebox is 20"X24"( I built this rig myself ) I use only hardwood lump charcoal,plus hardwood for smoke ! never do I use lighter fluid or Match light, I fire my smoker with a propane weed torch and use a charcoal chimney for additional coals, I have backyard cooked for years and have in the past two years started competition BBQ, my first year I was blessed with (2) 3rd place wins at the same show (1) 3rd in ribs (1) 3rd cooks choice recipe! I was hooked, The rest of the year was the school of hard knocks, In 2012 I entered 5 competitions with one being a national event and a state championship, the results of that year were (1) best of show
(1) 3rd place ribs + 3rd place cooks choice (1) 1st place chicken (1) 1st Grand Champion Ribs (1) 3rd place Brisket @ IBCA State Competition. My cook team is called Panther Mountain BBQ Crew (although I am a one man show) I am not a pro cook by any means, but have had the opportunity to learn and meet some of the best in the biz, I look forward to learning from you on this site and maybe I can help someone as well, Sorry for the book, but now you know a little bit about me!!
