Hello, I am new to the forums, but have readings and lurking for awhile. I am the execute chef at a smokehouse/steakhouse in the heart of the Ozarks. I have been BBQing and cooking most of my adult life. Lots of good info here, I hope to be an active member when time permits. I spend about 55 hours of the week in the kitchen and smokehouse however so my spare time is limited.
