New member and new to the smoking world. I live in Dallas, Texas and have a Masterbuilt Electric smoker. I have only used it for 7-8 times so far, mostly pork butt and ribs. I am trying to make jerky for the first time today. I look forward to learning from all of you. First question... I have set my smoker at 165 degrees to make jerky (the smoker is in the shade). All of a sudden the temp has skyrocketed to 185 degrees and i am not sure why? Is there a temp monitor I need to check/.clean? if so, where is it located? i would look inside right now if I was not in mid-smoke...
