TJ here from Fort Wayne, IN by way of NYC. I have some experience smoking meat on a modded cheapo vertical charcoal smoker.  Just moved over to a Masterbuilt Sportsman Elite gas smoker.  I did a couple of the basic mods including adding casters, lava rock and cast iron skillet. 

Anyway, glad to be here.  I look forward to my future smokes.

Welcome to the board! Ft. Wayne, huh? I was there in 2005 for Spicefest. I helped man a BBQ booth - this guy was running an offset just for show, and doing his competition cooking on another rig.


If there were hickory cigarettes, it was like I smoked two packs.

The guy in the booth next to us was running a Big Green Egg, the only time I've watched one in use.


There was more, but that would be a complete thread hijack
