Hello. My name is Wil, and I am from Southern NM. I have never smoked anything before in my life, but I love to grill. I have a Kingsford Sierra Smoker, so I might as well start using it.

I do have one question already though. like I said I am a newbie, but is the fire box just for the fire? is the rack above the charcoal tray where you out the wood chips? I would assume that since it is so small, the meat would be done in the main grill part with the only fire in the fire box? Sorry if it sounds like a dumb question and probably is, but don't want to waste meat. thanks.

yeah, I am super excited to start the whole smoking game. I love cooking for other people and getting the satisfaction of knowing they love it. The only draw back for me is I am never happy with my own stuff. I al

im sure youre an excellent cook just being modest. i know the feeling though having your friend and family over and seeing the smiles on their faces when they eat your food is priceless.

looking forward to getting a pellet smoker soon and trying some of the tips from this forum
 
 
Would not call myself excellent by any means....

Anyways, have you ever grilled the Omaha steaks fillet mignon? I did a couple tonight and to be honest, was not impressed. for the price, I would have expected to have an outer body experience!! even my girlfriend said the steaks from the butcher were way better..... maybe a bad batch?
