Heating my commercial smoker build

    Hi everyone,

    I am a commercial fisherman and have been building an insulated stainless steel commercial smoker for smoking some fish for retail. The cooking space in my smoker is approx. 4ftx2ftx5ft. I am wondering if 2 1200 watt 120v elements would be good enough to heat up this box? I only smoke my fish at about 200 degrees. The issue is I only have access to a 20 amp plug. Is there a good supplier for elements online I can order from? Also, is there a cheap way to get good size cooking racks as my smoker should hold around 50 22x26 in racks.

    Is this smoker insulated?  I have a wooden one that is insulated it's 6ft tall 3ft wide and 30 inches deep.  I use 2 heat elements 1 1200watt and one 1500 watt and in the dead of winter with both coils can keep it an easy 225.  During the summer months I run only the 1500 watt coil and can hit 225 so if insulated you will be all set.  Use the replacement elements you can buy from brinkman or bass pro shop.
