Paying up for whole foods for sure . That's a good lookin hunk of meat . Boned rolled and trimmed . That would be great for sliced roast pork dinner .

I'm in RVA and quickly learning that Whole Foods is not the place to acquire briskets, butts, etc... having said that I discovered a gift card to Whole Foods recently and bought exactly the same cut so hope it turns out as good as yours. Costco, Walmart, and Tom Leonard's seem to be the best Richmond area options (although I'm sure there are others), and occasionally the local butcher to support local. Nicely done!
