Hatch Pepper Tomatillo Pork

Started out making chicken broth. I buy my rotisserie chickens at Sam's. They are by far the best! I always save the bones and vacuum seal then freeze for stock.

Then broiled peppers and Tomatillos and sliced up.

Seasoning pork with my Hatch Pepper seasoning. Going through this stuff like crazy. Going to have to try make some. Broiled it for 10 minutes per side. Was so good and tender after that saved a few pieces to eat. If I could just get my CSR's to come out that good.

Missed the pic of meat broiled I guess. I was to busy eating them. Cut in 1 " chunks or so. Put peppers Tomatillo's and meat in pot. Added Hatch Chile seasoning, Chili seasoning, few garlic cloves and little salt and who knows what else. Covered with broth. Put into 375 oven. After 1 1/2 hours added about half bag cactus and lime.

One hour later added bunch of Cilantro and let go 30 minutes. This was so incredibly good!

Thank You tallbm tallbm for the inspiration! I bought all the stuff to make Red Sauce but that going on the back burner for couple weeks now.
 
Dammit Man! That looks soooo good.
Y'all are killing me with these fresh green chiles.

And Brian, I'm a jealous man for you for having access to fresh Nopalitos, precut and packaged at the store.
I know where two prickly pear cacti are at, and neither will share or sell paddles or fruit.

Wow Brian, that looks nothing short of spectacular. Great job and I bet is was fantastic!! I'll be first on your mailing list if you offer it up mail order. Just send me a 55 gallon drum for starters please :emoji_astonished:

The only good thing about 60 mile drive to work is all the great stores to stop on way home!
