Hatch Green Chile Stew

Used very hot Iron Skillet to quickly brown up 3 lbs pork butt chunks. Next time I will go 4 lbs. Added 3 Tbsp of my keto flour to meat.

Cut up Tomatillo's, onions, garlic, cilantro and 4 large Hatch peppers. The garlic is some wild elephant garlic a friend gave me. Love that stuff. Going to find some where at the river to plant some of it.

Sauteed onions and garlic. Everything into the pot.

Added 5 cups chicken stock made from chicken base. Added some Chili powder, cumin and black pepper.

Simmered on stove for 1 hour. Tasted and needed salt. I use this Vegeta when adding salt to stews and soups. Really good flavor. There was to much liquid at this point so removed cover and when another 30 minutes.

Wow is this good! I ate 2 bowls and wanted a 3rd.

Almost don't want to give any of this a way but made up 3 to go's and the big one mine. I will being doing this again very soon! Looking forward to seeing other people's Hatch Chile dishes.
