I'm having fun considering options for cooking today. I have a pork shoulder and a pork loin, plenty of fuel, an offset and a Weber. And a flag on the front of the house!

I plan to cut some thick chops off the end of the loin, for grilling. I'll smoke the rest of it as one big piece, and that'll be good for later use like slicing into sandwiches or a pot of beans.

Maple, apple, mesquite, hickory all await. This will be fun, I'm turning it into a smoke-centered holiday party.

But first, a friend is coming over and we're going to meet the guy delivering his little sailboat that was in storage in Michigan.
 
Fuel, meat, wood on hand, friend with sailboat and a big holiday to celebrate.

You got big problems my friend. I worry about you.

Now to work. Part One:



Six thick-cut chops for grilling later, and the waiting sauce - half Sweet Baby Ray's and half A1, with a generous shake of garlic powder


Then, fresh garlic, kosher salt and ground black pepper in a mortar and pestle


Rubbed and bagged. Now to go set up the smoker.
