We've got a 4 1/2 lb. bone in ham for New Years Day.
I use an MES 130.
2 Questions:
How long and at what temp.
I'm thinking of using maple wood chips.
I know it needs to brined.
 
Ham meaning already cured ham?
 
Look up “ham in a hurry recipe” on google. Might be traeger or something’s site but they have a good recipe making a quick ham. I’ve used it as a guideline em before. You can brine/ cure it tonight and get it ready to cook tomorrow! Good luck
 
It IS a ham. I know this butcher and he sold it as a ham. He's an award winning butcher and also a client.
 
Most likely an uncured ham.......they are popular these days with people that can't eat nitrates.
Are you sure it's not cooked as in raw?
 
There are more nitrates in vegetables than a cured product has...
Generally 5-10 times as much nitrate...

I have a cured ham. I will be adding some smoke to it.

Suggestions on time and temp for a 4 1/2 - 5 lb ham.
