Finished up ham and ribs. I was determined no foil ribs this time. Took 8 hours. Tender but not the same on electric smoker. Just doesn't look right. Butt ham is off the charts Delicious! All I can say is Wow! Took to 165. I am done hot smoking on the MES. This thing been a PITA. I going back to WSM. Served me well for the last 20 years. Thought going electric would be easier but the WSM really does not take much effort and puts out great food.

Weber smoker really does great job and has great control. There is just nothing like charcoal and real wood for flavor and really miss smoke ring. Just makes food look better. I do like new toys and have this one out of my system. That ham did turn out pretty tasty though.

I don't think I will ever buy a ham now. This is one of the best hams I ever had. I really miss the smoke ring on the ribs. I know it does not effect taste but just doesn't look right with out it.
