I have a fresh cheese that freezes well, but I'm on the hunt for a more flavorful cheese that keeps well in the freezer.

The queso fresco I make a bunch of freezes pretty well, we eat it for the months the goats are dry.I wouldn't freeze cheese personally. Vac-sealed in a refrigerator will last a long, long time. If it starts getting mold, unseal it, wipe it down with vinegar & water, dry for a day and re-seal.
