US Select is what most stores sell, not just Walmart.  It's less wasty, leaner, still tender; it's what more people want and reduce their saturated fat levels a bit. With such extensive merchandising in a meatcase what with thin cuts and cubed (tenderized) cuts, toughness is less a problem than trying to sell overly fatty cuts.  The average housewife will choose a leaner cut vs. a fattier cut for their family's consumption, not equating fat with f.a.t. (flavor and tenderness).

My wife would do the same herself, the Select is less wasty therefore it is a better value as far as she is concerned.  Yes, we know the difference.  But not all decisions are ours, lol!
