Well I basically use LEM's store bought jerky or snack stick seasoning but here is one that I doctor up to make an AMAZING and unique jerky!
Their jerky seasonings are pretty good and make things simple. If anything, use the cure completely and then go a little light on the actual seasoning to avoid getting too salty.

The Thai Jerky recipe that I use will work for ground meat too.
This is for 1 pound of meat, multiply as needed.
1 lb top round steak, cut into strips
2 tablespoons fish sauce
1 tablespoon dark or light soy sauce
2 teaspoons sugar
½ teaspoon ground white pepper
1.13 grams of Prague cure #1 (5.67 grams for 5 pounds)
