For those who feel they need to install a hole in the side or top of their smoker or grill to be able to insert a temp probe, here’s a couple pics of automotive grommets being used to insulate the drilled hole. Most of your local automotive parts stores will have these little packages of misc grommets in different sizes. Very simple to do.

Here’s a couple pics of one of my Big Chief smokers with grommetized holes on both left, right and top side.
