I am going to do 10lbs of garlic onion brats and wondered if I could grind, season and let sit in the fridge overnight before stuffing or will it set up and not stuff well?  I have always done it all at once and let the stuffed brats sit in the fridge overnight before packaging.  Just don't feel like doing it all at once today.

Thoughts from the experts?

It will set up some, but not so terrible that you can't stuff it.  If needed, you can add a little water to it and mix it up prior to stuffing.

Several of us on here mix one day and stuff the next.
 
I mix one day then stuff then next.  No problem.

Like Cranky said, if needed add a little water....  very little.      I  rarely add water.
 
If you're making fresh without a cure, it's probably a good idea to chill well after mixing anyway.
I always make a two day job of it. After cleaning up the grinding and mixing mess I'm not in the mood for another mess. Break time [emoji]128527[/emoji]
