I have a couple of whole Red Tilapia in the freezer.  I love the whole grilled fish they do in Mexico.  I have tried once years ago to grill whole fish but it stuck bad and fell apart.   I am wanting to give this another shot.  I seen one guy that put down sliced onions before laying the fish down which might work.  Of course onions burnt to a crisp.  I would like to use either my Char-Griller or Kettle.  Both have SS grates.  Any suggestions?
