I'll admit I'm not a purist when it comes to using my Pit Boss for every day cooking. Hard to beat pellet grills for long or low and slow cooking for this old man, but there are just those times when I have to bring my ole Char-Griller offset to life. I haven't tried a reverse sear yet but my better-half and I are planning a special steak meal in the near future for just the two of us. Today I'll be using both grills at the same time. P.B. w/ a beef roast, low and slow and the C.G. as a cold cheese smoker. Here in S/W MI. it's +21*, 5-7mph breeze so I'm still cooking in the garage.
 
wind hurts my temp staying stable ,pit thermistor sez 1 thing lid way high ,reckon wind is pushing in to fool the probe, haven't messed with it to see where air is getting into and causing as most of the time its not this bad
