I marinaded these in the last of my KC Masterpiece Classic Steakhouse Marinade, which is another thing the virus killed , with some fresh pineapple for about 5 hours. Think use Sous Vide for the rest though my buddy says he slow smokes those than quick sear. I on third round of seasoning. Sure smokes up the house.

I use my gas grill .
I should have said in my first comment , that the steak looks pretty good from here , and nice overall plate . One of the things I liked the best about my Chargriller was the way it cooked steaks . Raise the coal grate all the way up and use all wood burnt down to coals .
