Love rockfish tacos! They had fresh fillets at the grocery store, so that was dinner. A few minutes per side, as hot as the MAK would run. Cotija cheese, avocado, pickled onion & jalapeño, cilantro, sour cream and lime.

It's at the top of the list for us, as far as fresh fish goes, along with ling cod. Regular cod, like you would normally find at the grocery store, makes a damn good taco as well, as does halibut. Rockfish and ling cod, don't freeze worth a darn, but when fresh, there's none better IMO.

I see rockfish at my local Costco all the time, and I've been sorely tempted. But of course they are Costco-sized packages and I live alone, and as you say, it doesn't freeze well. Next to ling cod, it's my favorite for fish & chips.

Many rockfish are called rock cod, unless the OP is calling rockfish/striped/ bass, depending on which coast he is posting from.

Rockfish on the east coast is our west coast striped bass.

These are some of our West Coast rockfish, they are all very mild, flaky, white flesh, delicious, cod-like fish.

They do make awesome fish & chips! Ceviche, as well.

These are the common rockfish we have here.
 
I won't do rockfish ceviche, unless the fish has been frozen for a while.
Way to many parasites in bottom dewling rock fish.
But once it's been forzen for a few days/weeks, Im completely down.
Much like how good sushi places handle their fish. Freeze, and then it's good to go .
 
Can you expand on ceviche? I am very much intrigued!
A favorite of ours. The fish is basically "cooked"/denatured with citrus juice, primarily lime. Here's a good recipe to start with, and tweak it to your liking. We like avocado in it.

So far, we've been lucky for 40+ years! 😁 Our "rockfish" aren't really bottom dwellers. Mid water fish, around rock outcroppings.
