Oh, my goodness, that looks good! I would finish that meal off with a piece of lemon meringue pie and a cup of coffee. Wooooeeee!

Thank you Colin. Great flavors in the marinade. We had chocolate covered almonds and coffee for dessert. But the pie would work too!!

Tried something new this weekend and it turned out incredible—Grilled Catfish with Dijon Sauce. If you're a fan of bold flavors and easy prep, this dish hits all the right notes.


I seasoned the catfish with a simple blend of smoked paprika, garlic powder, salt, black pepper, and a touch of cayenne. Threw it on the grill for about 4–5 minutes per side until it was perfectly flaky.


But the real star? The Dijon Sauce. I whisked together:


  • 1/3 cup Dijon mustard
