Grill temp vs. dome temp

My question: Which is more important for smoking in a kamado? Is it the temperature at the grate, or the dome temperature.

I am smoking on my Akorn Kamado for the first time. I am using a dual probe digital thermometer. The grill temp probe clips to and rests just above the grate.

The temperature on the digital thermometer is about 100 degrees higher than the dome's analog thermometer. I expected a difference, but dang!
Anyway, I dropped an analog meat thermometer through the top vent / damper. It reads the same as the dome thermometer. I tested the meat thermometer with boiling water. It is spot-on.

Any help will be much appreciated on this rainy day.

The meat is on the grate so that is the important temp...JJ
