GRIILED CHICKEN CAPRESE IN THE CAST IRON

Happy Friday everyone!
Last night I did a pasta dish in the cast iron on the grill.

This is what I came up with.

Started with seasoning the chicken. Salt,papper and some Italian seasoning

Put those on the grill and started building the stuff in the cast iron. I mixed the pasta with some Alfredo sauce and put that in the bottom. Not too much sauce. Just enough to keep them moist during the cook.

Then I added a little bit of pesto on top of the pasta.

Chicken is off the grill. Letting it rest before slicing.

Then sliced up and added to the cast iron.

Next up some big hunks of fresh mozzarella and some thin sliced tomato that had been seasoned with salt and pepper.

Back onto the grill!

A few minuts later the cheese had melted and tomato cooked. Took it off the grill and topped with balsamic glaze and some fresh basil.

Ready to eat!

Man was this good! This is the first pasta ive done in the cast iron on the grill and I was blown away! Now I know that texture everyone is talking about! Really really good stuff!

Damn that looks good man! Glad to see you jumping on the CI bandwagon. The flavor and texture you get from doing it on the grill is so much better than the oven. Like the flavor profile as well. Very creative. LIKE!

Thanks ive been starting to do more stuff in the cast iron but that was the first pasta.....not sure I can go back now! Lol!
