Griddle Pastrami Hash

I've been using my new Blackstone griddle a lot lately. Since I woke up late (hey I'm on vacation) I decided to make a heavier breakfast and call it a brunch. I had some baby Yukon potatoes that I need to use up so I whipped up a quick and hearty hash on the griddle.

Sliced potatoes were nuked for two minutes to facilitate cooking. They were seasoned with salt and pepper. I threw a small diced onion on a few minutes later.

Combined the potatoes and onions and threw on some cubed pastrami that I keep on hand in the freezer.

After a few minutes of cooking, everything is mixed together and haphazardly chopped.

After I mixed everything together,I added a pat of butter, mixed again and pushed it off to the side while I cooked some sunny side up eggs. This type of egg isn't my favorite but I like to cook them here because I break the egg up and mix with the rest of the hash before eating.

Topped with the egg and a bit of dried parsley for garnish. I added a bit of green sriracha sauce to mine before eating. All in all, a very good and quick breakfast. My wife was on a conference call, she couldn't talk but gave me a "thumbs up" from across the table. That's good enough for me.

Wow Joe. Hard to beat a goof homemade hash. That looks really good my friend!! Love that Egg on top though. I can only imagine what that'd be like oozing all through the hash...heavenly I'd imagine. Well ya got up late. After that breakfast I'd imagine you need to go back to bed early to make up for it :emoji_laughing:

Very nice! I think the best part of that meal would be the yolk running out and giving every bite that nice fatty mouth feel. Mmm mmm. I can just about taste it!

That is delicious looking! Hmm, I believe I still have a few pieces of pastrami in the freezer. I might do that this Friday.
 
Hash is a family favorite here, and boy does that look good Joe. Well Done.

Thank you Robert, the egg definitely tops it off (pun intended). It was a filling meal, not enough to go back to bed but to power through lunch without eating another meal.

Thank you Travis. I love the sunny side up for this one because of the exact reasons you describe. If I'm eating a regluar egg for breakfast then it needs to be flipped. But for hash, sunny side up all the way!

Yea Joe, really nice way to start the day!

Looks real good from where I am sitting, makes me hungry for breakfast....off to my bowl of cereal and sliced banana.

Missed this yesterday . Looks great .
I could eat some form of potatoes for breakfast every morning.
Me too .
I scrub the skin and wrap potatoes in foil and throw them in the coals of the weber . Let cool , fridge over night . Next morning I smash the whole thing flat , then take the foil off and heat back up in a pan with some butter . Fast way to do it and really tasty .
 
Missed this yesterday. Looks perfect Joe! This is my idea of a perfect Breakfast. I'd eat this 3-4 times a week if I could.

That sounds like an excellent idea Chop. Growing up, leftover baked potatoes were the next day’s home fries.

Thank you Mike! I agree I could eat this 3-4x a week as well, especially when potatoes are involved. Probably not a wise idea though.
 
Great looking breakfast there. I'd surely be down for a little nap after that.
We got a Blackstone a few weeks ago but the wife has laid claim to it and I haven't been able to use it yet. She's a better cook that me so I don't mind too much. I still have the smoker and two or three grills to play with.

Thank you Braz! My wife and I have been loving the new griddle although I do all the cooking on it. It's nice to do breakfast outside instead of stinking up the house.
