Checking in from NJ. I've been lurking for better than a year now and figured it was time to emerge from the shadows. I found this forum while looking for bacon curing info and I've been clicking in here every evening since. Thanks to everyone who freely contributes their knowledge. Still have to make my own bacon but the info you share has certainly helped me up my outdoor cooking game, much to the pleasure of the family. Hope that I'll be able to contribute in the future.
