Hi all,

I just joined today and am looking forward to learning more about the art of smoking food. I live in St Louis, literally in the shadows of the AB Brewery.  My favorite spoked meats are, Pork Steaks (I know, shocking for a st louisan), Ribs, Brisket, pork shoulder.

I just bought a new Gourmet Electric ECB, but have not seasoned or used it yet. I also own a 2-burner Char-Broil RED infrared Grill (both items are perfect for a medium apartment deck. As soon as I get my stepless Fan speed controller I will test my ECB and see if I can control the temps, I hope :). Any help that the experience smokers here can provide will be very much appreciated.
