Charlie here. Finally joining the forum after a long time reading it for tips and pointers. I've been smoking meat for about 8-10 yrs now, mostly in offset charcoal smokers. Nothing big, just for family and friends. Usually fire up the smoker a couple times a month in the summer. Can't beat having a cocktail on a summer Sunday afternoon out on the deck while listening to the Twins game, with the sweet aroma of TBS in the backround. After himming and hawwing for quite some time, I went out and bought a MES30 last summer. I've been quite impressed with it so far, but I'm not getting rid of ol' betsy anytime soon. Anyway, glad to finally "show my face" here at SMF and looking for some informative chats.
