I found your forums searching Google for modifications I could make to my new Char-Broil American Gourmet Charcoal Smoker. It is a little small and I am concerned about keeping an even temperature over several hours. I got this smoker for Christmas and immediately wanted to exchange it for something bigger. I ended up deciding to keep it because I normally only cook for 1-3 people. I could not justify having to use a whole bag of charcoal when grilling a small amount of meat.
As far as smoking, we shot a couple hogs and had them processed just before Christmas. Since I got a lot of hog meat and didn't have to pay a lot, I figured I could, with trial and error, learn to smoke some good meat.
I have two neighbors that are self proclaimed pit masters. I'm sure most of you know the type. They'll hollar atcha from across the street while standing next to their pit. So you walk across the street and they say "getcha a lil of this" while proudly smiling with what they've just accomplished. Don't get me wrong, It's always good. I would like nothing better than to surprise my neighbors with some good smoked meat of my own. Hopefully I can learn a bit here and do just that.
