Hello All, I'm John and currently living in NE Indiana. A displaced Texan freezing my keister off and waiting for Summer. I am a principal in a construction company that primarily works with the banks and realtors in the area. I grill or smoke 4-5 days a week for our crews and staff. (even this time of year) I have an old New Braunfels smoker (I believe its called a Black Diamond) that I've owned for over 15 yrs. I have a New Braunfels upright style smoker (like the Brinkman types only heavier) I also have a 225 gallon hog roaster and am in the early process of building a smoker out of a 225 gallon fuel oil tank that I will have on its end rather than length wise with an offset firebox. My personal preference is beef over pork...but being up north I tend to have to cook for the masses and pork it is. I have a bit of experience, and don't hear many complaints.....but I'm always looking for new twists, new ideas and ways and things to cook to keep from getting bored.
