Jeff - from southeast Texas. Love meat smoking and have enjoyed perusing these forums (among others), but a new member. I've got a 1500 lb regular pit and a home-build wood smoker with digital electric assist. Hardly ever use the regular pit any more now that I've got the new beast running efficiently. My primary beginnings in smoking came from brisket cooking (this is Texas, of course) on my big machine. I got a digital smoker from Masterbuilt and used it for about three years. I never could get the control from the thing I wanted. Temps kept well enough (until it broke & they went AWOL) but the smoke was never like a "real" pit smoke. When I started planning my custom box that was a focal factor - to have a real firebox - but I didn't want to give up the digital control. Thus, the hybrid was where I landed. Love to make & smoke sausage as well. Never been able to do as good of a job with previous boxes, but the Auber PID gives me precise control for a perfect smoke every time. VERY pleased with their product thus far. I cook for folks here & there, but have no desire to ever be more than a weekend warrior. Life is too busy already. But, when I'm knocking around the yard working at home, there simple NEEDS to be the smell of oak smoke in the air. And, if I'm lighting a fire - I'm cooking! Great to join you folks.
