I've been a member of the forum since 2012 but I don't suppose I've officially introduced myself. Allow me to do so My name is Scott - I'm 31 - I live in Dallas TX. I've been smoking meat (Ribs/Brisket/Turkey/Chicken/Butts/Loins/Chops) since about 2001 when I got my 1st smoker for Christmas. I have a Char-Broil with an off set firebox. Participated in a few comps with one 'Peoples Choice' award. I recently acquired a STX-International 3000 meat grinder and have been making fresh sausage. I'm now looking to invest in either an electric (non Traeger - not a fan) or propane smoker to start making smoked sausages and other foods that require lower temps. I have found a plethora of valuable information on these forums and truly look forward to Jeff's newsletters. They never fail to inspire.
