I've been grilling and cooking with fire for most of my life, but I've never had a dedicated smoker. I have an Orion, which is cool, but its a different beast.

The forums have already proven more than helpful in some decisions and also in the smoky array of possibilities.

Great place you have here...happy to be here.

Welcome! Had to check out what an Orion Cooker was. Pretty interesting machine:

A revolutionary way to cook out. Moist, tender meat without the wait. The revolutionary Orion charcoal cooker simultaneously smokes, steams, and uses convection with an extraordinarily fast cooking time. Perfect for pork tenderloin, turkey, baby back ribs, and salmon. Cooks a 20-lb. Turkey in 2 hours, 15 minutes, without sacrificing succulent, juicy flavor that will melt in your mouth every time. Low-maintenance unit gives you moist and tender meat every time, with no flare-ups. Stainless steel design.

Its done very well for me. Once you figure out basic timing, you load it, light it, and walk away. 20lb turkeys in 2 hours, 6 racks of ribs in about the same.

But, it is whatever temp it is. Could pop some probes in and monitor, but decided to go for an upright propane so I have more controllable high and low temp options. And then I can fiddle and fuss all day if I want to. :)

Thank you all for the warm welcome!

Next time I fire up the Orion I will get pics, but I will be bringing home an upright gasser soon.

Thanks again from a different kind of smoke head in Colorado.
